In a large pot, heat cooking oil over medium heat. Cook onion for 3 minutes, add garlic and cook 2 minutes more.
Add carrots, and zucchini and cook for 5 minutes. Sir regularly.
Stir in tomatoes, water, and herbs. Cover and cook until tomatoes fall apart and form a sauce.
Then add spinach and blue cheese and cook until wilted.
Preheat oven to 400F or 200C.
In an oven-safe dish, layer half of the sauce and top with lasagna noodle sheets. repeat layering and finish with grated cheese.
Cook for 20-30 minutes in the oven, or until noodles are cooked through. Grill cheese layer last few minutes if needed.
Serve with green salad on the side.
