Tuna Spinach Pizza with Zucchini Crust
I just love the zucchini crust! So much better and healthier than a regular pizza crust. Though you can top the crust with your favorite topping, I used a tomato sauce, spinach, and tuna for this one.

Ingredients
For the pizza crust
- 3 cups zucchini grated
- 1 cup flour of your choice (GF if needed) we used buckwheat
- 1/4 cup Panko/breadcrumbs (GF if needed) or more flour
- 1 ounce Parmesan cheese
- 1 egg
For the sauce
- 3 cups tomato chopped
- 2-3 cloves garlic minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- black pepper to taste
- sea salt to taste
For the toppings
- 1/2 cup onion sliced
- 3 cups spinach
- 1 cup grated mozzarella cheese
- 1 can solid white tuna packed in water drained and crumbled
Instructions
For the crust
- Preheat oven to 430°F or 220°C.
- Grate zucchini and squeeze out as much liquid as possible.
- Combine all crust ingredients and mix well by hand.
- Line a baking sheet with parchment paper. Sprinkle with a little flour. Spread the zucchini crust mixture evenly with a fork or spoon, about ½ inch thick. Make 2 smaller circles or go for 1 big pizza in the shape of your baking sheet.
- If the crust feels to wet, add a little more flour or panko to the mix.
- Pre-cook crust for 10 minutes or until lightly browned.
For the sauce
- Meanwhile, heat a skillet over medium heat. Cook garlic for 30 seconds.
- Add tomatoes and balsamic vinegar. Cook until sauce-like consistency. This will take about 10 minutes. Allow to cool slightly.
- Cook spinach in a pan until just wilted.
- When the crust is ready, top with sauce, grated cheese, spinach, tuna, and blue cheese (optional).
- Cook/grill for another 10 minutes.
Notes
- Time-saving Tip: although I would strongly recommend making the zucchini crust if you are short on time opt for store-bought pizza dough instead. Most of them are ready to use.
- Notes: we had some blue cheese left so added that too. Lovely. Feel free to top your pizza with your favorite ingredients, veggies only or not!
