Avocado Orange Salad
Avocado and orange pair so well together in this simple lunch salad. Sometimes less is more! Plus, it is so quick to throw together.

Ingredients
For the salad
- 1 orange peeled and segmented
- 1/2 cup onion thinly sliced, preferably red onion
- 1 avocado sliced
- 3 cups salad greens of your choice torn
- 1/4 cup walnuts (optional)
For the dressing
- 1 tablespoon fresh orange juice
- 1 clove clove of garlic minced
- 1/2 tbsp apple cider vinegar
- 1/2 teaspoon Dijon mustard
- sea salt to taste
- black pepper to taste
- 2 tbsp extra-virgin olive oil
Instructions
- Segment the orange over a small bowl/plate, so you’ll not lose the juice. Squeeze any remaining juice from the peels and membranes into the bowl too.
- Combine all dressing ingredients. Whisk well until combined. Add a little balsamic vinegar if you like.
- In a large bowl, combine salad greens, orange segments, onion and avocado. Drizzle with salad dressing. Toss to combine. Top with walnuts if using.
Notes
- Leftover orange juice can be added to smoothies or take a quick vitamin shot of it while making this salad.
- Take-along tip: store dressing in a separate container and keep greens and nuts on top.
