Banana Bread with Walnuts

This vegan banana bread with walnuts recipe is moist, delicious, and super easy to make. Be sure to use very ripe or even overripe bananas for a strong banana flavor!

Ingredients

  • 1/3 cup extra virgin coconut oil butter or olive oil works too
  • 1/2 cup maple syrup/honey
  • 2 egg or chia/flax egg (scroll down for more info on vegan chia/flaxx egg
  • 2 banana mashed
  • 1/4 cup unsweetened almond milk or other milk of your choice
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon plus more to swirl on top
  • 1.75 cups whole wheat flour
  • 1/2 cup walnuts chopped

Instructions

  • Preheat oven to 325°F or 165°C and grease a 9×5-inch (22x12.5 cm) loaf pan.
  • In a large bowl, whisk the oil and honey together. Add the eggs and beat well, then whisk in the mashed bananas and milk. If the coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 5-10 seconds in the microwave.
  • Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you're adding any additional mix-ins (cacao nibs, goji berries, etc), gently fold them in now.
  • Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.
  • Optional: Add a little butter or chia seed jam on top.

Notes

  • VEGAN CHIA OR FLAX EGG: for 1 vegan egg that can be used in most baking recipes, combine 1 tbsp chia seeds or ground flax seed with 3 tbsp water. Stir and let sit for a few minutes to create the vegan "egg." 
  • Optional: add other nuts, seeds, cacao nibs, or goji berries to the batter if you like.
  • Yummy with a little ghee/clarified butter or chia seed jam.
  • 1 loaf serves 4-6 people (about 12 slices, depending on how big you cut them)
