Tropical Chicken Spinach Pasta
Pasta, chicken, spinach, and pineapple are baked to perfection in this simple and quick comfort food meal.

Ingredients
- 1.5-2 cups whole wheat fusili (or gluten-free alternative)
- 1/2 cup onion chopped
- 2 clove garlic minced
- 1.5 cup pineapple cubed
- 9 oz skinless boneless chicken breast cut into bite-size pieces
- 3 cups spinach packed
- 2 tsp paprika powder
- 1 tsp garlic powder
- sea salt to taste
- black pepper to taste
For the sauce
- 2 tbsp cornstarch
- 1/2 cup pineapple juice or pasta cooking water works too
- 2 tbsp soy sauce/Tamari
Instructions
- Cook pasta in lightly salted water according to the instructions on the package.
- In a large pot or wok, heat cooking oil over medium heat. Cook onion and garlic, while stirring, for 4-5 minutes or until onions are translucent.
- Add chicken, paprika powder, garlic powder, salt and pepper. Cook for 5 minutes more. Stir regularly.
- Then add pineapple and spinach. Cook until wilted, about 3-5 minutes. Stir regularly.
- Combine sauce ingredients in a small bowl. Whisk well.
- Add sauce and drained/cooked pasta to the spinach-pineapple mix. Stir well until heated through.
Notes
Tamari and soy sauce share a similar color and flavor, and are both a byproduct of fermented soybeans. The only difference, Tamari is made without wheat and doesn’t contain any gluten.
