Heat coconut or olive oil over medium heat in a large skillet. Saute onion for 2 minutes, then add garlic and cook until onions are soft.
Add carrot and bell pepper, cook for 5 minutes more.
Add tomatoes, rosemary, oregano, salt, pepper, and water. Simmer on medium-low for 15 minutes, or until tomatoes turned into sauce-like consistency.
Add spinach and cook for 5 minutes uncovered. Make sure the sauce is not too moist. Cook a bit longer to remove most liquid if needed.
Preheat oven to 400 F or 200 C.
Add filling and cheese to one half of the pizza dough and fold. Repeat for second calzone.
Bake calzones for 10-15 minutes or until browned.
