
Spiralized Veggie Noodles with Garlic-Yogurt Dressing
Spiralized veggies are all the hype these days and for some good reasons. They taste so much better than pasta noodles and can be eaten raw or cooked. Up to you 😉

Ingredients
For the salad
- 1 big carrot spiralized
- 1 big zucchini spiralized
- 1 cup (Daikon) radish spiralized
- 1.5 cup cherry tomato halved
- 2 tablespoons pumpkin seeds raw or toasted
For the dressing
- 1/4 cup plain unsweetened yogurt
- 1 tablespoon apple cider vinegar
- 1-2 cloves garlic minced
- 1/2 lime/lemon juice only (use less if using lemon)
- sea salt to taste
- black pepper to taste
Instructions
- Whisk together all dressing ingredients.
- Add all salad ingredients to a large salad bowl. Toss to combine.
- Drizzle with dressing and top with pumpkin seeds or other nuts of your choice.
