Ingredients
2cupwateror unsweetened coconut water
2cupspinach
1cupred beet (raw)peeled and roughly chopped
1cupcucumberroughly chunked
2cuppineapplechunked
1tbspfresh grated gingerpeeled (or to taste 1 inch = 1 tbsp grated)
1lime/lemonpeeled and pits removed (use half if using lemon)
1tbspextra virgin coconut oil
Instructions
Blend spinach and water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
Optional: top with goji berries, chia seeds, coconut flakes, hemp hearts, etc., if you like.
Notes
TIP: Use one or more frozen fruit(s) to chill the smoothie. Or use ice cubes instead.
