Tomato Feta Avocado Salad

For the salad
- 3 cups salad greens of your choice coarsely chopped
- 1/2 cup cucumber diced
- 1/2 cup tomato diced
- 1/2 avocado chopped
- 1/4 cup onion chopped
- 2.5 oz feta cheese crumbled (or mozzarella works too)
- 1/4 cup pine nuts roasted
For the dressing
- 1 tbsp extra-virgin olive oil
- 1/2 lime/lemon juice only (use less when using lemon)
- 1 tsp fresh grated ginger
- Drizzle maple syrup or honey
- black pepper to taste
Combine all dressing ingredients in a small bow. whisk well until combined. Set aside.
Add all salad ingredients to a bowl, toss to combine, and drizzle with dressing.
