Ingredients

For the salad

  • 3 cups salad greens of your choice coarsely chopped
  • 1/2 cup cucumber diced
  • 1/2 cup tomato diced
  • 1/2 avocado chopped
  • 1/4 cup onion chopped
  • 2.5 oz feta cheese crumbled (or mozzarella works too)
  • 1/4 cup pine nuts roasted

For the dressing

  • 1 tbsp extra-virgin olive oil
  • 1/2 lime/lemon juice only (use less when using lemon)
  • 1 tsp fresh grated ginger
  • Drizzle maple syrup or honey
  • black pepper to taste

Instructions

  • Combine all dressing ingredients in a small bow. whisk well until combined. Set aside.
  • Add all salad ingredients to a bowl, toss to combine, and drizzle with dressing.
