Minty Bok Choy Smoothie
Bok choy has a mild green or bitter flavor. It tastes somewhat like spinach, only a little stronger. In a green smoothie, the green flavor of bok choy is easily masked by just about any fruit you add to it. It's a perfect leafy green to sneak into a smoothie for picky kids (or grown-ups).

- 2-3 cups bok choy packed
- 1 cup papaya chunked
- 1 cup mango chunked
- 1 banana chunked
- 2 cups water
- 2 tablespoons chia seeds or ground flax seed
- 1/4 cup fresh mint leaves
Blend bok choy, mint, and water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base to thin. If you have a high-speed blender you can throw in everything at once.
Add superfoods/toppings - such as goji berries, hemp hearts, or raw cacao nibs - if you like.
