Watercress Sun-Dried Tomato Avocado Salad
Refreshing summer lunch salad with homemade sun-dried tomatoes. So good!

For the salad
- 3 cups watercress
- 1 cup (Daikon) radish julienned or sliced
- 1/2 cup sun-dried tomatoes
- 1 avocado cubed
- 1/4 cup unsalted almonds or other nuts of your liking
- 1/2 cup feta or mozzarella cheese cubed or crumbled
For the dressing
- 1/2 lime/lemon juice only (use less if using lemon)
- black pepper to taste
- 1-2 tbsp extra-virgin olive oil
Combine all dressing ingredients in a small bowl. Whisk well until combined. Set aside.
Combine salad ingredients in a large bowl, drizzle with (Italian) dressing and top with almonds or other nuts of your choice.
- Note: If you have some more time you could also make the Italian dressing below. It’s a bit more work, but it’s absolutely delicious.
- Take-along tip: keep lime juice, olive oil, and black pepper or the Italian dressing in a separate container and store watercress on top.
Italian dressing recipe
1 tbsp Dijon mustard
1 tsp honey
2 tbsps apple cider vinegar
2 tbsps extra virgin olive oil
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried rosemary
black pepper to taste
sea salt to taste
