Beautiful antioxidant-rich morning drink to start the day fully energized. A morning meal like this gives you a head start on getting 5 to 10 servings of fruits and vegetables you need each day.

- 2 cups baby kale
- 2 cups water
- 1 medium carrot peeled and chopped
- 1 small red beet (raw) peeled and chopped
- 1 cup strawberries fresh or frozen
- 1 medium banana
- 2 tbsp extra virgin coconut oil (optional)
- 1/4 cup fresh mint leaves or to taste
- 1/2-inch fresh grated ginger or to taste
Place baby kale, water, carrot, and beet into a blender. Blend until smooth. Add all other ingredients and blend again. If you have a high -speed blender you can throw everything in at once. If the smoothie is too thick for you at more water.
Optional: top with superfoods like chia seeds, hemp hearts, or goji berries if you like.
- TIP: Use one or more frozen fruit(s) to chill the smoothie. Or use ice cubes instead.
