Pineapple Cabbage Salad

For the dressing
- 1 lime/lemon (use less if using lemon, ½ lime = 1 tbsp)
- 1 tsp maple syrup or honey
- 1/2 tsp soy sauce or Tamari
- black pepper to taste
For the salad
- 1 cup carrot julienned
- 1 cup red cabbage chopped
- 1 cup cucumber cubed
- 1/3 cup red onion chopped
- 1/3 cup spring onion chopped
- 1-2 cup salad greens of your choice shredded
- 1 cup pineapple chunked
For the toppings
- 2 tbsp pumpkin seeds raw or roasted
- 1 tbsp dried goji berries (optional)
- 2 tbsp unsweetened desiccated coconut
Whisk together all dressing ingredients.
Add all salad ingredients to a large salad bowl. Toss to combine.
Add dressing and toppings of your choice.
Tamari and soy sauce share a similar color and flavor and are both a byproduct of fermented soybeans. The only difference, tamari is made without wheat and doesn’t contain any gluten.
