Pineapple Cabbage Salad

Ingredients

For the dressing

  • 1 lime/lemon (use less if using lemon, ½ lime = 1 tbsp)
  • 1 tsp maple syrup or honey
  • 1/2 tsp soy sauce or Tamari
  • black pepper to taste

For the salad

  • 1 cup carrot julienned
  • 1 cup red cabbage chopped
  • 1 cup cucumber cubed
  • 1/3 cup red onion chopped
  • 1/3 cup spring onion chopped
  • 1-2 cup salad greens of your choice shredded
  • 1 cup pineapple chunked

For the toppings

  • 2 tbsp pumpkin seeds raw or roasted
  • 1 tbsp dried goji berries (optional)
  • 2 tbsp unsweetened desiccated coconut

Instructions

  • Whisk together all dressing ingredients.
  • Add all salad ingredients to a large salad bowl. Toss to combine.
  • Add dressing and toppings of your choice.

Notes

Tamari and soy sauce share a similar color and flavor and are both a byproduct of fermented soybeans. The only difference, tamari is made without wheat and doesn’t contain any gluten.
