Thai salad with Peanut Sauce
We just love salads topped with dressings or sauces made with peanut butter. Especially when you use homemade peanut butter. It so easy to make and taste so much better.

For the dressing
- 1/4 cup peanut butter
- 1 teaspoon fresh grated ginger
- 1 tablespoon apple cider vinegar
- 1 tablespoon sesame oil
- 1 teaspoon maple syrup/honey
- 1/4 lime/lemon juice only (use less if using lemon)
- water to thin
For the salad
- 1 cup bell pepper (capsicum, any color) sliced
- 1.5 cup red cabbage chopped
- 1 cup carrot julienned
- 1/3 cup spring onion chopped
- 2 cups Chinese cabbage shredded (or iceberg lettuce)
- 1/3 cup fresh parsley/cilantro garnish
- 1/3 cup raw unsalted cashew nuts raw or roasted (garnish)
Combine all dressing ingredients. Whisk until well combined.
Combine salad ingredients, top with cashews (if using) and drizzle with dressing.
