Peanut Zucchini Noodles

Spiralized zucchini and carrots are coated in a delicious peanut sauce making these Peanut Zucchini Noodles a fast, easy and healthy lunch option.

Ingredients

For the dressing

  • 1 clove garlic
  • 2-3 tablespoons peanut butter
  • 1/2 lime/lemon juice only (use less when using lemon)
  • 1 tablespoon soy sauce/Tamari
  • 1 Thai chili pepper or jalapeno chopped (optional)

For the salad

  • 1 big zucchini spiralized
  • 1 carrot big, spiralized
  • 1 sweet pepper (red or green) spiralized
  • black pepper
  • 1/4 cup fresh chives chopped
  • 1 tbsp sesame seeds (optional)

Instructions

  • Combine all dressing ingredients in a small food processor. Process until creamy. Add splash of water if needed.
  • Combine spiralized veggies and dressing. Mix well to coat. Season with black pepper to taste. Sprinkle with chives and sesame seeds, if using.
