Tuna Avocado Wraps

Looking for a lunch idea that is quick and easy to make? Lunch wraps are your answer. Not only are they delcious and super fast to make, you can easily take them to work too.

Ingredients

  • 4 medium corn tortillas
  • 1 can solid white tuna packed in water drained and flaked or use leftover fish from yesterday
  • 1/4 cup red onion chopped (or green onion or both)
  • 1/2 cup tomato cubed
  • 1 jalapeno deseeded and chopped (optinal)
  • 1 avocado
  • 1 lime
  • 1-2 cup salad greens of your choice we used a mix of spinach and iceberg lettuce
  • sea salt to taste
  • black pepper to taste

Instructions

  • Mash tuna with a fork and add green onions and jalapeno.
  • Mash avocado and mix with tuna (or leftover fish)
  • Season with salt, pepper, and lime juice and mix again.
  • Top wrap with iceberg lettuce, red onion, tomatoes, and tuna-avocado mix.
  • Optional: add carrots, cucumber (or pickle), or anything else left in the fridge.

Notes

  • If you opt for tuna make sure it is sustainably caught, low in mercury, high in omega 3, and BPA-free. “Wild Planet” is a good example.
  • Take along tip: Tightly wrap in plastic or aluminum foil before adding the wraps to your lunchbox. Or secure with toothpicks instead.
