Season chicken with salt, pepper, and paprika powder. Heat a large pot or wok with cooking oil (I used extra virgin coconut oil for the added flavor) over high heat. Cook chicken until lightly browned. Transfer to a plate.
Reduce heat to medium. In same pan, sauté onion for 2 minutes. Add more oil if needed. Add garlic and cook for 2 minutes more before adding broccoli, zucchini, and red cabbage. Cook for 5 minutes more
In a small bowl whisk together all sauce ingredients.
Add chicken pieces and sauce to the veggie mix. Stir well, cover, and cook for 5-10 minutes. Stir frequently.
Season with salt and pepper to taste.
