- 2 cups bok choy roughly chopped
- 1 tablespoon fresh grated ginger or to taste (1 inch = 1 tbsp grated)
- 1 cup carrot roughly chopped
- 2 cups mango chunked
- 1 apple cored and roughly chopped
- 2 cups water or unsweetened coconut water
- 1 lime/lemon peeled (use half if using lemon)
- 1 tablespoon extra virgin coconut oil
Blend bok choy and water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
Optional: top with goji berries, chia seeds, coconut flakes, etc., if you like.
