Apple and Red Beet Smoothie

- 1/2 cup red beet (raw) chopped
- 1 apple chunked
- 1 banana chunked
- 1 cup mixed berries (fresh or frozen)
- 2 cups spinach packed
- 1 cup fresh orange juice we used blood oranges
- 1 cup water
- 1 tablespoon extra virgin coconut oil
Blend spinach, water, and orange juice until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
Top with superfoods if you like. I topped mine with goji berries and chia seeds.
TIP: Use one or more frozen fruit(s) to chill the smoothie. Or use ice cubes instead.
