Chickpea Avocado Feta Salad

For me, this is the perfect summer salad! It is easy to throw together, saves you time in the kitchen, is refreshing, and packed with a wide range of nutrients.

Ingredients

  • 1.5 cup cooked chickpeas (1 can or ½ cup dried, soaked, and cooked)
  • 1 avocado cubed
  • 1/4 cup spring onion chopped
  • 1/2 cup fresh mint finely chopped (or use cilantro or parsley instead)
  • 1 cup cucumber chopped
  • 1/2 cup feta cheese crumbled
  • 1 lime/lemon juice only (use less if using lemon)
  • black pepper

Instructions

  • Combine all ingredients in a large salad bowl. Toss to combine. Add more lime/lemon juice if needed.

Notes
