For us, May is always a month of celebration. Especially the first 2 weeks. Not only do we celebrate my birthday and my hubby’s birthday, but we have lots of friends who were also born in May….
As a result, we indulged ourselves with way too much sugar and bubbles than our body can handle. Therefore, this week we will add lots of detoxing foods to our diet to give our body and organs a well-deserved rest.

Here are my 6 favorite cleansing and nurturing soup recipes that definitely will be on the menu in the coming few days.
1. Leafy Green Detoxer
Ingredients
- ½ onion
- 2 cups chicken or fish stock, or filtered water or vegetable broth if you’re a vegetarian or vegan.
- 2-4 large handfuls of leafy greens (kale, spinach, collard, dandelion, chard, etc). I mostly use a mix of kale and spinach. But this time I will add dandelions as well for its cleansing benefits.
- ½ cup peas
- 2 small handfuls of dried seaweed (wakame works best)
- Juice of half a lemon
- 2 tbsps. tahini paste
- 2 tablespoons coconut oil
- Parsley (or coriander) to taste, chopped.
Directions
- Bring peas, onions, and water to a boil.
- Add leafy greens and dried seaweed, Steam briefly until greens are emerald in color.
- Remove from heat and add coconut oil and lemon juice.
- Blend or process until smooth.
- Spoon into 2 bowls and top with tahini paste and chopped parsley.
- Serve immediately.
2. Cleansing Cabbage Soup
Ingredients
- 2 cups green cabbage
- ¼ cup apple cider vinegar
- 10 cups vegetable broth
- ½ yellow onion
- 6 celery stalks, chopped
- 6 baby carrots, chopped
- sea salt, to taste
- Cayenne pepper, to taste
- 1 lemon, juiced
- 5 cloves garlic, minced
- ¼ cup chopped cilantro or parsley if you don’t fancy the cilantro flavor.
Directions
- Put all ingredients, except apple cider vinegar, lemon juice, cilantro (or parsley) salt and pepper, in a large pot and bring to a boil. Reduce the heat and simmer for about 20 minutes.
- Remove from heat and add lemon juice, apple cider vinegar, salt, and pepper.
- Blend or process until smooth.
- Spoon into a bowl and top with chopped cilantro or parsley.
3. Creamy Ginger-Carrot Soup
Ingredients
- 2 tablespoons extra-virgin coconut oil
- 1 cup chopped sweet onion
- Kosher salt
- 1 tablespoon minced garlic
- 2 tablespoons minced peeled ginger
- 2 pounds carrots, peeled and chopped
- 1 medium russet potato, peeled and chopped
- 6 cups low-sodium chicken or vegetable stock
- 1/4 cup pine nuts
- 1 1/3 cups plain low-fat Greek yogurt (or coconut cream)
- Freshly ground pepper
- 1 teaspoon honey
- 1 teaspoon minced fresh thyme
Directions
- Combine coconut oil and onions in a pot over medium heat. Cook for about 10 minutes while stirring until the onions just start to caramelize.
- Add ginger and garlic and cook for another 2 minutes while stirring. Be careful not to burn your ingredients.
- Add vegetable or chicken stock, carrots, and potato. Bring to a simmer and cook until carrots and potato are tender. This will take 20 to 25 minutes.
- In the meantime, lightly toast pine nuts and set aside to cool.
- Combine the yogurt, honey, thyme, and pepper in a small bowl.
- Puree all ingredients until smooth and season with salt and pepper to taste.
- Top with yogurt mixture and pine nuts.

4. Broccoli- Arugula Soup
Ingredients
- 1 tablespoon coconut oil
- 1 clove garlic, thinly sliced
- 1/2 yellow onion, roughly diced
- 1 head broccoli, cut into small florets (about 2/3 pound)
- 2 1/2 cups water
- 1/4 teaspoon coarse salt
- 1/4 teaspoon black pepper, freshly ground
- 3/4 cup arugula (watercress would be good, too)
- ½ lemon
Directions
- Sauté the garlic and onion over medium heat.
- Add the broccoli and cook for 4 minutes until bright green.
- Add water, salt, and pepper.
- Bring to a boil and reduce the heat. Cover and simmer for 8 minutes (until broccoli is tender)
- Pour into a blender and add arugula. Blend until smooth.
- Serve with fresh lemon to taste.
5. Refreshing Asparagus-Spinach-Quinoa Soup
Ingredients
- 2 tablespoons extra-virgin coconut or olive oil
- 2 large yellow onions, chopped
- 1 bunch asparagus tips
- 1 teaspoon salt, divided
- 2 tablespoons plus 3 cups water, divided
- 1/4 cup quinoa
- 1 bunch green chard (about 1 pound)
- 14 cups gently packed spinach (about 12 ounces), any tough stems trimmed
- 4 cups vegetable broth, store-bought or homemade
- Big pinch of cayenne pepper
- 1 tablespoon lemon juice, or more to taste
Directions
- Sauté the onions and ¼ tsp. salt in a large skillet over high heat until brown, about 5 minutes. Stir frequently.
- Add 2 tbsps. of water, cover, and cook while stirring frequently until onions are reduced and caramelized.
- Meanwhile, bring 3 cups of water, salt, and quinoa to a boil. Reduce the heat, cover, and simmer for 15 minutes.
- Trim white ribs from the chard and coarsely chop spinach and chard greens.
- When the quinoa has cooked for 15 minutes, add chard, cover, and simmer for 10 minutes.
- Add caramelized onions, spinach, asparagus, broth, and cayenne pepper. Simmer for another 5 minutes until spinach is tender but still bright green.
- Puree until smooth and add lemon juice to taste.
6. Raw Minty Cucumber Soup
Ingredients
- 1 1/2 pound English cucumbers, peeled and chopped
- 1 cup chopped mint
- 1/4 cup chopped chives
- 2 teaspoons chopped garlic
- 1 1/4 cup plain nonfat yogurt
- 1/2 tablespoon fresh lemon juice
- 1 teaspoon sea salt
- Pinch freshly ground black pepper
Directions
- Puree cucumber, mint, chives, and garlic until smooth.
- Pour the mixture into a large bowl and whisk in the remaining ingredients.
- Chill for 2 hours in the fridge.
