Carrot Mango Ginger Zinger

Add some zing to your day with this cleansing and refreshing Carrot Mango Ginger Zinger smoothie.

Ingredients

  • 2 cups bok choy roughly chopped
  • 1 tablespoon fresh grated ginger or to taste (1 inch = 1 tbsp grated)
  • 1 cup carrot roughly chopped
  • 2 cups mango chunked
  • 1 apple cored and roughly chopped
  • 2 cups water or unsweetened coconut water
  • 1 lime/lemon peeled (use half if using lemon)
  • 1 tablespoon extra virgin coconut oil

Instructions

  • Blend bok choy and water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
  • Optional: top with goji berries, chia seeds, coconut flakes, etc., if you like.
