Zucchini Pizza with Arugula and Bell Pepper

I just love this tasty, crispy zucchini crust pizza that is sure to satisfy your pizza cravings. Pure comfort food!

Ingredients

For the crust

  • 2 zucchini grated (1 zucchini = 2 cups grated)
  • 1/2 cup grated mozzarella cheese
  • 1/3 cup flour of your choice (GF if needed) we used buckwheat flour
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • sea salt to taste
  • black pepper to taste

For the sauce:

  • 2 cups tomato chopped
  • 2-3 clove garlic minced
  • 1/4 tsp dried rosemary
  • 1 tsp dried oregano
  • sea salt to taste
  • black pepper to taste

For the topping:

  • 1/2 cup onion sliced
  • 1 cup bell pepper sliced
  • 1/2 cup grated mozzarella cheese
  • 2 cups arugula roughly chopped

Instructions

For the sauce

  • Optional: roughly peel tomatoes for smoother sauce consistency.
  • Heat cooking oil over medium heat. Saute garlic for 1-2 minutes or until fragrant.
  • Stir in tomatoes, sea salt, black pepper, oregano, and rosemary.
  • Reduce heat, cover and cook for 10-15 minutes. Slightly cool before adding to the crust.

While sauce is cooking

  • Preheat oven to 430°F or 220°C.
  • Grate zucchini, add to a clean kitchen towel and squeeze out as much liquid as possible. Combine all crust ingredients and mix well by hand.
  • Line a baking sheet with parchment paper. Sprinkle with a little flour. Spread the zucchini crust mixture evenly with a fork or spoon, about ½ inch thick. Make smaller circles or go for a big pizza in the shape of your baking sheet to share. If the crust feels to wet, add a little bit more flour (or panko/breadcrumbs works too) to the mix.
  • Pre-cook crust for 10 minutes or until lightly browned.
  • Top with sauce, then mozzarella cheese, followed by onion and bell pepper.
  • Grill for 10 minutes in the oven, or until cheese has melted and browned.
  • Top with arugula and serve.

Notes

Makes 1 small pizza each or make baking sheet big pizza(s) to share.
