Easy Cinnamon Banana Pancakes with Chia Seed Jam or Cashew Lemon Cream
Easy, yummy breakfast (or dessert) for those lazy weekend days. though you can top them with any food you like, I love mine with chia seed jam and fresh berries.

For the batter
- 1 banana
- 1/2 cup unsweetened almond milk or any other milk of your choice
- 1 cup flour of your choice (whole wheat, oat, buckwheat, (GF) AP flour, etc.)
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon powder
- 1 teaspoon vanilla extract
- sea salt
- 1 tablespoon maple syrup or honey or any other sweetener of your choice (optional)
Toppings
- (Chia seed) jam and/or cashew cream for pancake topping (scroll down to notes to get the recipes)
- 0.5-1 cup raspberries or any other fruit you like
Combine banana, vanilla extract, raw honey, and almond milk in a small food processor (or mash really well by hand).
Combine all dry ingredients in a bowl and add the banana almond milk mixture. Whisk until well combined.
Heat a skillet with coconut oil over medium heat.
Add about ΒΌ cup of the batter into the pan and cook until golden brown on the underside. This will take about 1 minute.
Optional: add chunky ingredients such as nuts, cacao nibs, fruit, etc
Flip and cook other side until golden.
Top with your favorite ingredients.
- Other possible toppings: fresh fruits, cashew cream, chopped nuts, cacao nibs, raw honey, almond butter etc.
- If using frozen bananas, defrost first.
- If the batter is too thick, add a bit more almond milk.
- Sieve the flour for extra fluffy pancakes.
- Chia seed jam recipe: change the fruit with any fruit of your liking, I used strawberries for this recipe.
- Lemon cashew cream recipe: make sure to make enough, cause this is absolutely yummy and pairs well with berries as a healthy afternoon snack.
- Vanilla extract recipe: super easy to make, but it takes a lot of time. So you won't be able to use it for this recipe, but it is fun to make and tastes great in desserts, smoothies, or chia seed puddings.
