Ingredients

For the dressing

  • 1/2 lime juiced
  • 2 tsps Dijon mustard
  • 1 tsp maple syrup/honey
  • 2-3 tbsp extra-virgin olive oil
  • sea salt to taste
  • black pepper to taste

For the salad

  • 1-1.5 cup papaya julienned, green or unripe if possible, or mango works too
  • 1 cup red cabbage chopped
  • 2 cups baby bok choy chopped
  • 1/2 cup cucumber chopped
  • 1 cup tomato chopped
  • 1/2 cup onion chopped
  • 1/4 cup spring onion
  • 2 Thai chili pepper or jalapeno chopped and seeds removed if you like it less spicy (optional)
  • 1/3 cup fresh parsley or cilantro, basil works too

Instructions

For the dressing

  • Add all ingredients to a small bowl. Whisk until well combined.

For the salad

  • Wash and chop all ingredients.
  • Toss them together in a large bowl and add dressing just before serving.

Notes

If making the day before, store dressing in a separate container and add just before serving.
