Ingredients
For the dressing

lime
juiced

Dijon mustard

maple syrup/honey

extra-virgin olive oil
sea salt
to taste
black pepper
to taste
For the salad
1-1.5

papaya
julienned, green or unripe if possible, or mango works too

red cabbage
chopped

baby bok choy
chopped

cucumber
chopped

tomato
chopped

onion
chopped

spring onion

Thai chili pepper or jalapeno
chopped and seeds removed if you like it less spicy (optional)

fresh parsley
or cilantro, basil works too
Instructions
For the dressing
Add all ingredients to a small bowl. Whisk until well combined.
For the salad
Wash and chop all ingredients.
Toss them together in a large bowl and add dressing just before serving.
Notes
If making the day before, store dressing in a separate container and add just before serving.
