Pineapple Mojito Green Smoothie
A mojito in the morning. Oh yes, you can. This healthy version of a mojito is just yum in the morning or why not add a little rum and serve to your guests as a lovely and healthy cocktail. Not in the morning of course ;)

- 2 cups kale
- 2 cups unsweetened coconut water
- 3 cups pineapple
- 1/4 cup fresh mint leaves or more to taste
- 1 lime/lemon peeled and seed removed (use less if using lemon)
- 1 tbsp chia seeds (optional) (topping)
- 2 tbsps dried goji berries (optional) (topping)
Blend kale and coconut water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
Optional: Top with chia seeds, goji berries, flax seed, hemp hearts, etc., if you like.
- Use one or more frozen fruits to chill the smoothie. Or use ice instead.
