Banana Breakfast Quesadilla with Mango Salsa

A sweet, gooey, delicious banana breakfast quesadilla the whole family, especially the kids, will love.

Ingredients

  • 1 banana sliced
  • 2 tablespoons peanut butter
  • 2 small wrap/tortilla (GF If needed) we used whole wheat tortillas for this
  • 2-4 tablespoons dried goji berries (optional) optional
  • 2 tablespoons raw cacao nibs/raw chocolate chopped
  • 2 tablespoons unsweetened desiccated coconut
  • 1.5 cup mango diced

Instructions

  • Spread the peanut butter over the surface of the tortilla.
  • Slice the banana very thinly and then arrange the slices over half of the tortilla. Sprinkle with chocolate/cacao nibs and goji berries and fold the tortilla in half.
  • Cook the quesadilla in a dry skillet over medium-low heat until golden brown and crispy on both sides.
  • Serve with small mango salad, topped with goji berries and desiccated coconut.
