Red Cabbage Salad with Orange Peanut Dressing
I just love this Asian-inspired orange peanut dressing. The brightness of the orange juice, apple cider vinegar, and fresh garlic offer a great flavor counterpoint to the peanut butter.

Ingredients
For the salad
- 1.5 cup red cabbage chopped
- 1 cup bok choy chopped
- 2 cups salad greens of your choice torn
- 1 cup carrot julienned
- 1 cup cherry tomato halved
- 2 tbsp sesame seeds raw or roasted
For the dressing
- 2 tbsps peanut butter
- 1/2 orange juice only (1 orange = approx 1/2 cup juice)
- 2 tbsp apple cider vinegar
- 2 tbsp extra-virgin olive oil
- 1 clove garlic minced
- 1 tsp maple syrup/honey
- sea salt to taste
- black pepper to taste
Instructions
- Whisk together all dressing ingredients until combined. Set aside.
- Combine all salad ingredients, toss to combine and drizzle with salad dressing.
