Red Cabbage Salad with Orange Peanut Dressing

I just love this Asian-inspired orange peanut dressing. The brightness of the orange juice, apple cider vinegar, and fresh garlic offer a great flavor counterpoint to the peanut butter.

Ingredients

For the salad

  • 1.5 cup red cabbage chopped
  • 1 cup bok choy chopped
  • 2 cups salad greens of your choice torn
  • 1 cup carrot julienned
  • 1 cup cherry tomato halved
  • 2 tbsp sesame seeds raw or roasted

For the dressing

  • 2 tbsps peanut butter
  • 1/2 orange juice only (1 orange = approx 1/2 cup juice)
  • 2 tbsp apple cider vinegar
  • 2 tbsp extra-virgin olive oil
  • 1 clove garlic minced
  • 1 tsp maple syrup/honey
  • sea salt to taste
  • black pepper to taste

Instructions

  • Whisk together all dressing ingredients until combined. Set aside.
  • Combine all salad ingredients, toss to combine and drizzle with salad dressing.
