Ingredients

  • 9 oz whole wheat flour or GF alternative
  • 1/2 tsp dry yeast
  • 1/2 tsp sea salt
  • 1/2 tsp raw sugar
  • 3/4-1 cup water lukewarm (15°F or 40°C)

Instructions

  • Sieve flour into a large mixing bowl. Add yeast, sugar, and salt.
  • Add little water and start kneading (or use mixer with dough hook). Keep pouring the water, a little at a time. After mixing/kneading for a while, the dough for your pita bread should become an elastic ball. If it is too crumbly, add more water. When to moist or sticky add a little bit more flour.
  • Optional: add rosemary, turmeric, thyme, parsley, moringa, or other herbs/spices of your liking.
  • Cover with a clean kitchen towel. Let sit in a warm place for at least 20 minutes or until it doubles in size.
  • FYI: If it is winter, turn the oven on for just a few minutes. Turn it off and let it rise there for a while.
  • When risen, take out the dough and knead a little with your hands. Divide the dough in 4-6 small balls.
  • Dust a flat surface with flour and use a rolling pin or your hands to make pita breads that are approximately 1 centimeter thick. add a little flour to the rolling pin too.
  • Heat a non-stick frying pan to medium-high heat (with no grease) and cook each pita bread for about 3-4 minutes each side. they should puff up a little. You could also make them in a very hot oven. Line them on a baking sheet lined with parchment paper and wait till they blow up. This will take a few minutes.

Notes

Add herbs or spices to the dough for extra flavor (dried rosemary, oregano, thyme, moringa, spirulina, etc)
