
Crunchy Cabbage Salad with Mango Mayonnaise
A refreshing summer salad with a lot of crunch. The cabbage works prefect with the sweetness of the mango basil mayonnaise.

Ingredients
For the salad
- 1.5 cup red cabbage chopped
- 1.5 cup green cabbage chopped
- 1 cup tomato chopped
- 1/2 cup carrot julienned
- 1/4 cup spring onion chopped
- 1 shallots chopped
For the dressing
- 2 cups mango
- 1/2 lime/lemon or to taste, juice only
- 1/4 cup fresh basil leaves
- sea salt to taste
- black pepper to taste
- 1 tsp fresh grated ginger or more to taste (we like it gingery)
- 1 clove garlic
Instructions
- Add all dressing ingredients to a blender or food processor and blend until smooth.
- Combine salad ingredients in a salad bowl and toss to combine.
- Pour dressing over salad and enjoy!
Notes
- Leftover dressing can be stored in the fridge in an airtight container for about 2 to 3 days.
- If you are taking this salad to work, store dressing in a separate container and add just before serving.
- Add salad greens, such as arugula or watercress, seeds or nuts, for extra flavor and nutrients.
